A Taste of Summer in Bohinj

Summer is finally here and apart from enjoying beautiful weather and lots of outdoor fun, we can also look forward to lighter, delicious food that tastes even better in the sunshine.

Here at Sunrose 7, we take great care when planning our seasonal menus and we put a lot of love into making sure our guests can devour mouth-watering dishes. If you’ve been following our news, you will know that this year we have a new head chef so we’re already ahead of the game when it comes to great food - whatever the weather!

Our guests will now be able to sample the culinary delights of the renowned master chef, Jože Godec.  His signature dishes are made from secret family  recipes that have been passed down through generations.  Jože also keeps his eye on new cuisine trends but his plates are seasoned with local flavours, a stylish, modern day twist, and more than a pinch of Bohinj passion!

We recently updated our tempting summer menus and gave Jože carte blanche to create elegant, delicious dishes. His creations are a work of art and they really sum up the flavour and colours of a Slovenian summer.

We caught up with Jože, our superstar chef in a rare minute away from our busy kitchen to ask him about what ingredients make the perfect summer dishes.

“In summer, trout is a typical staple in Bohinj. Rolled in corn flour it gives it a tasty, crispy crust. Our local Bohinj trout is so versatile though and can be prepared in many creative ways. Venison also features a lot in our seasonal cuisine” 

He added: “Mohant cheese - another Bohinj speciality -  is usually high up the menu too. It can be used as a delicious accompaniment to meat dishes but it tasted incredible served with boiled potatoes.”

Our chef also likes to incorporate nature into his culinary creations - and why not?!

Jože said: “ We try to include as much of local plant based products in as many dishes as possible. I also love to include wild flowers from meadows and wild edible plants, not only for decorations, but also for flavour purposes. All of the wild plants I use are edible and have a meaning on the plate. I use nasturtium, wild thyme, yarrow, plantain, ground elder, common wood sorrel and many more.”

These are just some examples of what you can expect to find Jože  making behind the scenes at Sunrose 7. He’s never happier than when he’s cooking up a storm in the kitchen!

  • Cured trout, trout caviar with butter milk and dill oil,

  • Ravioli stuffed with cottage cheese with a wild  herb cream

  •  White asparagus in salad with dried quinoa, asparagus cream and parsley oil,

  • Cottage cheese mousse with strawberries

  • Bohinj corn cake with chocolate, vanilla ice cream and corn pudding.

  • Creme brulee with Mohant, strawberries and strawberry ice cream

Summer is a glorious time to visit Bohinj and sunshine makes a lot of things feel better, right? Dining outdoors in fine weather is one of life’s simple pleasures that just puts us all in a good mood. Food starts and ends our days and we should spend that special time wisely.

Like relaxing in the morning sun with breakfast, or chatting over an elegant dinner as dusk falls to make way for a romantic evening underneath the stars. 

We are blessed here at Sunrose 7 with such a picturesque and tranquil location - what a backdrop to your dining experience! Although the food really is the star of the show and deserves the spotlight. (Honestly, chef didn’t make us say that!)
